Jun Shan Silver Needle

君山银针

From the verdant banks of Dong Ting lake in Hunan province, Jun Shan Silver Needle is one of China’s most famous teas. We’ve selected this one made my Mr Yueshi, who is one of just a handful of authentic yellow tea producers left. Using traditional methods of yellowing and charcoal-baking learnt from a lifetime living in this terroir, Mr Yueshi picks the freshest spring buds and manipulates them slowly to remove their vegetal character and instead bring out sweetness and a warm delicacy. This year’s Jun Shan, delightfully mellow, tastes of sweetcorn, fresh herbs and barley sugar.

The perfect cup

  • Measure 4g or 2 tsp per cup (250ml)
  • Heat water to 75°C
  • Infuse tea for 4 minutes
  • You can re-infuse this tea three times
